CHILE RELLENO WINGS

 Ingredients Weight Measure
      
 Chicken wings, fresh, thawed and washed

12 ea.
 Original TABASCO® brand Pepper Sauce

1 cup
 Green chiles, canned, chopped
4 oz.
 TABASCO® brand Green Jalapeño Pepper Sauce
3 oz.
 Monterey Jack cheese, cut into 1/2" x 1" batons

12 pieces
 Beer batter mix
6 oz.

TABASCO®- Spiced Butter 
 Ingredients Weight Measure
      
 Butter, fresh, salted
8 oz.
 Original TABASCO® brand Pepper Sauce
1 oz.

Method

1Marinate the wings in 1 cup Original TABASCO® Pepper Sauce for approximately 1 hour.
2Mix the green chiles and 2 oz. TABASCO® Green Jalapeño Pepper Sauce.
3Create a small pocket in each wing by cutting an incision into one end and forcing a pocket into each incision.
4Fill each pocket with 1 piece of cheese and green chiles mixture and 1/2 oz. TABASCO® Green Jalapeño Pepper Sauce. Store wings in freezer until needed, or for at least 1 hour to aid in cooking and reduce cheese waste during cooking.
5Combine beer batter mix and 1 oz. TABASCO® Green Jalapeño Pepper Sauce. Dip wings into mixture. Deep-fry for 3-4 minutes until cooked through. Remove and drain well.
6To make the TABASCO®-Spiced Butter, soften/melt butter in microwave for approximately 2-3 minutes on high. Do not boil butter. Whisk in the Original TABASCO® Pepper Sauce. Hold at room temperature until needed.
7Toss chicken with TABASCO®-Spiced Butter until well coated and serve hot.
